Savory Shrimp Stuffing for Plantain Cups

Plantains

4 green plantains
large bowl
garlic salt
1 deep frying pan
canola oil

Stuffing

½ ln medium shrimp chopped
½ cup red bell pepper
½ cup green bell pepper
4 large garlic cloves
½ red onion medium chop
2 tbsp cumin powder
2 tbsp chili powder
1 tsp allspice
1 tbsp brown sugar
1 8 oz tomato sauce
Kosher Salt
1 jalapeno pepper veined and finely chopped
¼ olive oil

Heat the olive oil in a medium skillet. Add garlic, green and red peppers and onion and sauté until the ingredients become soft then add cumin, chili powder, allspice and jalapeno. Let them cook together a couple minutes more and then add tomato sauce and salt to taste.

Stir in brown sugar and let the mixture reduce and thicken.

When the sauce has thickened add the shrimp and let cook for an additional three minutes. Keep the stuffing on low heat while you fry and press the tostone.
